Ingredients
1 small, firm, ripe avocados
2 Tbsp. chopped fresh cilantro
½ lemon
Finely chopped scotch bonnet to taste
Pinch of Himalayan salt (Optional)
2 slices sprouted whole grain bread
Garnish
Pico De Gallo
1 large tomato small diced
1 jalapeño pepper small dice
1/2 red onion small diced
1 tbsp cilantro chop fine
1/2 tsp maple syrup

Instructions
• Place the peeled avocado in a medium size bowl and mash roughly with a masher or fork. Add cilantro and a large squeeze of lime juice, and scotch bonnet mash until just combined.

• To serve, spoon ¼ of the avocado mixture onto each slice of bread. Top with pico. Serve immediately garnished with cayenne pepper powder.
