Ital Plantain Porridge Recipe

Makes this easy highly nutritious and carb-rich porridge, packed with Vitamin C, Vitamin B6, and Potassium. This tasty dish will not only fill your belly , but also lower your cholesterol and help your body regulate fluid.

Cooking Time: 10 – 30 mins

Ingredients

1 Large green plantain
2 1/2 of cups water
4 cups unsweetened non-dairy milk preferably almond or cashew milk
9 Organic Medjool dates, pitted
2 Cinnamon sticks or few cinnamon leaves
½ Teaspoon fresh grated nutmeg 
Freshly juiced coconut milk

Instructions

1. Peel plantain.
2. Cut plantain into smaller pieces and add to blender along with water. Blend on high until mixture is completely smooth.
3. Pour mixture into a 3-quart boiling water I saucepan, add cinnamon sticks.
4. Rinse blender out and add pitted dates and milk, blending on high until dates are completely ground completely. Set aside.
5. Cook plantain mixture on medium-high heat, stirring constantly to avoid lumps and burning, for about 8 minutes or until plantain mixture is thicken and smooth. Lower heat and pour in date/milk mixture. stirring consistently, until porridge is cooked and is a thick yet pourable consistency. If too thick stir in a bit more milk and grate nutmeg.
6. Serve hot, topped with fresh grated nutmeg and hempseed harts and Fuljoy
